Baked Potato with Prawns and Marie Rose

Serves 4

1 syn on Extra Easy



4 large baking potatoes

4 level tbsp extra light mayo

1oz/28g Tomato puree

a dash of Tabasco sauce

a dash of Worchestershire sauce

14oz/397g cooked king prawns

Mixed salad to serve


Preheat the oven to 200c/400f/Gas 6. Scrub the potatoes and prick with a fork. Place on a baking tray and bake in the oven for 50-60mins.

Meanwhile, make the Marie Rose sauce: mix together the mayo and tomato puree and add the tabasco and worchestershire sauce to taste. Mix the prawns into thr sauce. Cover and shill until needed.

Remove the potatoes from the oven. Cut a deep cross in each one and squeeze gently upwards. Top each potato with the prawns Marie Rose and serve with mixed salad.
