2lb/908g lamb fillet, all visible fat removed, cut into chunks
9oz/255g baby carrots, trimmed
a small handful of thyme leaves, chopped
1pt/568ml beef stock
1 level tbsp gravy granules
1 bay leaf
Salt and pepper
7oz/198g green beans, halved
400g can haricot beans
a small handful of fresh parsley
Preheat the oven to 180c/350f/Gas 4. Spray a casserole dish with Fry light. Add the lamb, shallots, carrots, thyme, stock, gravy granules and bay leaf and season. Cover and bake for 1 hour.
Stir in the green beans and haricot beans, cover and return to the oven for 30 mins, or until the lamb is tender.
Remove from the oven, scatter over the parsley and serve.
