Pan haggerty

Ingredients

14oz/397g onions

1lb 2oz/511g large potatoes

3 large eggs

4oz/113g cheddar cheese

a small handful of fresh parsley

Fry Light

Salt and freshly ground black pepper


Preheat the oven to 190c/375f/Gas 5. Peel and chop the onions. Peel the potatoes and slice very thinly. Beat the eggs. Grate the cheese. Finely chop the parsley.

Spray a medium, heavy based non-stick overproof pan with Fry Light. Gently cook the onions over a medium heat with 8-10 tbsp of water for about 10mins, or until they soften and all the water is absorbed. Remove from the heat and drain the onions in a sieve. Put to one side.

Spray the pan with Fry Light. Arrange a layer of sliced potatoes, alternating with the onions and cheese. Finish with a layer of potatoes and cheese. Season well.

Pour over the eggs and return the pan to a medium heat. Keep checking the bottom of the pan haggerty by lifting it up slightly with a spatula, and once it starts to brown, remove from the heat.

Bake in the oven for 45 mins, increasing the temp. to 220c/425f/Gas 7 for the last 10 mins to brown the top. Garnish with parsley.
